I typically crave more salt than sugar but these are my very favorite Oatmeal Cookies, ever!  Hope you enjoy…

 

 

“Oatmeal Toffee Cookies”

Preheat Oven to 375.

1 C Butter Softened

2 Cups Packed Brown Sugar

2 Eggs

2 tsp vanilla extract

1 3/4 C Flour

1 tsp Baking Soda

1 tsp of Ground Cinnamon

1/2 tsp Salt

3 C Quick Cooking Oats

1 8 oz. package Heath Bits O’Brickle Toffee Bits (Secret Ingredient)

1 C Sweetened Coconut Flakes (optional)

 

Lightly grease cookie sheet, I prefer to use parchment liner sprayed with Pam.

Beat butter, brown sugar, eggs and vanilla with electric mixer on medium speed in large bowl until well blended.  Add flour, baking soda, cinnamon and salt; beat until blended well.

Stir in oats, toffee bits and coconut, if desired with spoon.  Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet.

Bake 8 to 10 minutes until edges are lightly browned…let cool and remove from pan.
